I teach it as it comes up during the mid-week gathering. We have just started an offering on Sunday mornings using Group magazine's Core Truths curriculum.

I think the first thing you have to do is define "theology" to your students. When they hear that word "theology", their "listeners" turn off b/c they think it's not for them. Theology, in short, is man's view of who God Is. We want our students to see God for who He is in His light. We don't want them to view God through our eyes.
So we point them to God's word. How do you teach theology this way? -As you go.
When I come to a spot in God's Word that is descriptive of God's nature, I make sure to point it out heavily.
You should also teach them that their attitude should always be, "God, come and purify my theology (the way I see You) with the fire of heaven." Remaining teachable is important in all our lives.

Discuss them on youth night as the Spirit leads you and teach it - us lots of illustrations and make the parables even urban if you have to. Don't shortchange them - they deserve to learn and know. "Theology" is not just for leders and deacons. Knowledge of god has been kept form young people for a long time. They deserve it. A more advanced discipleship course with foundational doctrines taught is appropriate. I use it and it helps grow my leaders...

Every middle schooler goes through a series with me called Fundamentals of the Faith, based on this workbook: http://www.gbibooks.com/Details.aspx?ID=1883973015
We do some creative teaching and discussion to keep it exciting but students walk away with a deeper understanding of the faith.

Once a month, we do "University University" an 1 1/2 hour college theology class. Right now, it is primarily attended by our 8th and 9th graders. It rotates through 24 topics or so, but as this is our first rotation, students are currently choosing the next month's topic. We are currently doing 2 months of Eschatology.

With that, we want to provide opportunities for them to learn more on their own, and help create bibliographies for them to do research.
