I like Pastor E's idea. For the shoot, find a backdrop that has some character (stained-glass window, painting, etc.). Don't put the subject in the center of the frame. Have them sit a bit to the side. If you don't want to put the Q's up on the screen, you could just give them a sheet with the questions and have them answer the questions in order (you might have to give them the questions ahead of time for this). Check out the link below that my friend Russell did for a Veteran's Day thing at his church. It's really well-done.

I don't think they need to hear you at all on the video. Like ruefuel said, sit down and record a conversation with them but have a list of questions as a guide. When putting the final video together, just have a blank screen with the question in white then the various people pop up saying whatever. Such as: the question "What year were you saved" pops up on the screen and then has the interview segment that shows them saying what year they were saved. I'd just do one a week and have a different question each week. That way the video just has one persons story and memories at a time.

I would say sit down and record them talking and maybe youll talk for more than a half hour or so, but then cut it down in the editing to whats good and important. Id say you should be off camera, make it more of just them telling their story then you asking them questions. Obviously, when filming youll need to have some questions to steer the conversation, but in the end what they say should be whats used primarily. Im kind of thinking of like the very first minutes of each Band of Brothers episode type thing, so I dont know.
